If you’re dairy free, egg free and gluten free you’ll find it difficult to find good breads, wraps and recipes for either of the above are overly complicated (or non existent).
Today we come to the rescue with a 2 ingredient recipe that is so simple and yet creates the most perfect, soft, stretchy, flexible wraps. They taste great too (watch the video for some super cute proof).
Recipe:
Take 1 cup of red lentils, wash well and soak overnight (in just enough water to cover 1cm above the top of the lentils).
Blend until smooth. Now add in 6Tbsp of gluten free self raising flour. Blend or mix until a smooth batter forms.
Spread the batter evenly across the base of a flat frying pan (either nonstick or lightly coated with oil). Cook until small bubbles start to form on the top of the mixture then flip and cook the other side until golden brown.
Enjoy these filled with your favourite sandwich toppings or dip into soup/curry. Of course you could also sweeten the mixture and enjoy these as Pancakes.
Thanks to the lentils, these flatbreads are very high in fibre and protein and folic acid.
